Tea-Smoked Wild Salmon

I have never made tea-smoked fish before and it was a fun experience. It is a must try if you love salmon.  The end result is a lovely mahogany colored fish with a smoky flavor.  I think that this would be a great recipe for camping as well. Mushroom Soup

If you are a mushroom lover, you will love this recipe. It was a simple soup to make and can be made into a vegan recipe very easily. The added texture of the whole oyster mushrooms made the soup robust and filling. It could be served by itself with crusty bread or with a meal.I had to use dried oyster mushroom. 1 oz dried mushrooms turned out to be around 4 oz when rehydrated. Beet and Prune Salad

I bought a huge beet at the farmer's market and ended up steaming it in my Instant Pot. It would have taken over an hour to roast this beet, but it only took 25 minutes in my Instant Pot. This was a fantastic recipe and was super easy for me to follow. You will not be disappointed with the results. Great for a dinner party or a late afternoon lunch.
