The Tasting Table Cookbook Club: January’s Cookbook
A few of my recipes these days have been coming from Ina Garten’s cookbook called Cooking for Jeffrey. I recently joined the Tasting Table Cookbook Club on FaceBook. It is a great group to join if you are looking to explore new recipes and need a little motivation by your peers. We are cooking through a different book each month posting photos of the meals we cooked along with any recommendations that would make the recipe better or healthier. My goal is to cook at least one recipe per week and so far I am having a blast sharing them with everyone.
We all have the intention to cook more and eat out less, but sometimes life gets in the way and we get stuck in a rut cooking dull and bland meals. If you find yourself in a cooking rut and would like to cook more homemade meals, I encourage you to join the Facebook group or dedicate one day a week to cook something different.
To make my life less stressful, I usually look to see what I have in the fridge, freezer, and pantry first. Then I build a recipe or find a recipe around what I already have, that way I am not buying every ingredient.
Try keeping frozen fish, shrimp, chicken breast, legumes and/or tofu on hand, and build a meal around your protein. Baking a filet of salmon and adding it to a mixed green salad or corn tortillas can be simple, fast and nutritious.
