Roasted Salmon Tacos

I made this recipe for a late lunch/early dinner on a gray Sunday afternoon. This recipe brightened up my afternoon, it was light but very flavorful.I joined a tasting table group on facebook that requires you to cook a recipe from a specific cookbook once a week. Coconut & Date Protein Bites

This recipe is from the Food & Nutrition Magazine that I subscribe to. You can easily substitute ingredients and change the recipe to suit your palate.This is a great snack for a little pick me up during the day. They are high in fiber and protein.
