Spicy Sweet Potato Empanadas

Sweet potatoes are full of beta-carotene. They are also a very good source of vitamin C, manganese, copper, pantothenic acid, vitamin B6, potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus. Skillet-Roasted Lemon Chicken

This was a fantastic recipe and was super easy for me to follow. You will not be disappointed with the results. Great for a dinner party or a late afternoon lunch. I ended up serving the chicken with roasted carrots and potatoes.For me, the hardest part of the recipe was butterflying the chicken. Farmer’s Market

My favorite part of the weekend is going to the Farmer's Market. Living in California is a true blessing because something is always growing here year round. I have lived here for 8 yrs now, and I have come to love the climate and the agriculture that surrounds us. Parmesan Roasted Zucchini

This recipe is great for any occasion. It would work for a buffet style dinner party, a light lunch served with your favorite protein or a quiet weeknight dinner served with grilled fish. Tarragon Shrimp Salad

I love shrimp! This recipe is pretty simple and can be prepared ahead of time. It can be served with a salad, corn tortillas to make shrimp tacos or with butter lettuce to make shrimp lettuce wraps.The recipe came from Ina Garten's cookbook called Cooking for Jeffrey. This was my third recipe from this cookbook, and so far, it worked out really well. Coconut & Date Protein Bites

This recipe is from the Food & Nutrition Magazine that I subscribe to.
